This one thing is called sambal or in other word is chilli-sort-of-sauce. It is made by chillies, tomatoes, lil salt, lil sugar and some shrimp-paste and you crushed them in one grinder. We use a traditional grinder made of stone or wood. It must be crushed with hand (not directly with hand)—you used some crusher. Usually it comes with the grinder stone/wood (er.. you can say in one-pack).
Indonesian people really loves it—but some people not (the one who don’t like hot stuff, or they allergic to chillies or shrimp-paste). But actually people won’t leave this thing when they eat. Especially when they eating some fried tofu, chicken or duck—combine with the vegetables and so on.
Indonesia has many variations of sambal depends of the province (and many kinds of cuisine). I can’t say one by one, but this one is the most common one—and easy to make.
